
I could eat this salad on.repeat. Which is hilarious considering I only found this gem of a vegetable like 2 years ago- whaaat! You 100% do not neee a detox with everything these little gems provide. Beets give the beautiful color and provide a boost of fiber, nitrous oxide & antioxidants. It’s tossed in a citrusy orange 🍊 vinegrette so it’s perfect for a summer side. If your feeling frisky- add some grilled chicken and avocado 🥑 & call it a day. Don’t let the prep of beets intimidate you- you can buy em steamed and peeled at Trader Joe’s, Vons & Albertsons.
Ingredients
- 2 Cups Cooked Quinoa
- 5-6 Beets, Steamed & Peeled
- 1/4 C Feta Cheese, Crumbled
- 1 Apple, Diced (any variety, I used pink lady)
- 1 Bunch Curly Kale, minced
- 1 Tsp Maple Syrup
- 1 TB Orange Juice
- 1 Tsp Apple Cider Vinegar
Preperation
- Combine quinoa, beets, feta, kale & apple in bowl, stir to combine
- To prepare dressing combine orange juice, syrup and vinegar- pour over quinoa mixture and combine.
- Let salad chill in fridge to let flavors combine and serve!
