If your looking for an easy to put together weeknight meal that’s also satisfying, this skillet may be your new go-to.
Even with prepping most of the ingredients ahead of time, such as slicing the onion, mincing the garlic and cooking the farro (all of which I store in Tupperware to just pull out), I still dont have time to make everything “from scratch.” If you have the time to make a homemade Marinara Sauce, or have a batch leftover in the freezer that would work lovely.
For time intensive purposes, I used a jarred marinara and canned white beans (drained well to omit excess sodium) and a 10 minute quick cooking farro from Trader Joe’s.
This recipe is:
-
Super Satisfying (contains a grain, protein, and a vegetable!)
-
Can be made Vegetarian or Vegan (sans the sausage + cheese)
-
Comes together in under 30 minutes
