This black bean, corn, and avocado salad is one of our go-to meal prep friendly, nutrient-dense recipes — ready in under 10 minutes with zero stove time. It’s a favorite for busy women and moms who want something nourishing on hand without another thing to cook.
We love it as a topper for tortilla chips, scooped alongside a protein at dinner, or portioned into containers for grab-and-go lunches during the week.

Ingredients
- 1 can black beans, rinsed and drained
- 1 can corn, drained (or fresh grilled corn if you have leftovers — even better!)
- 1 medium avocado, diced
- 1 pint cherry tomatoes, sliced
- A bunch of fresh cilantro, chopped
- Juice of 1 lime
- 1 tbsp olive oil
- Salt, to taste
Optional: ½ cup diced red onion. We tend to leave it out in our house, but it’s a popular add-in if you like the extra bite. Also consider pickled jalapeno for spice or diced mango for sweetness.
Instructions
- Rinse and drain the black beans and corn, and add them to a large mixing bowl.
- Slice the cherry tomatoes in half and add to the bowl.
- Chop the cilantro and add it in.
- Dice the avocado and gently fold it into the mixture.
- Squeeze the juice of one lime over the top, drizzle with olive oil, and season with salt.
- Toss gently to combine and serve right away, or portion into containers for the week.
Meal prep tip
This salad holds up well in the fridge for 3–4 days, which makes it an easy one to prep ahead. If you’re making it more than a day in advance, consider holding the avocado out and adding it fresh the day you plan to eat it — it browns faster than the rest of the ingredients. Store it in an airtight container, and give it a gentle toss before serving since the lime juice and olive oil tend to settle at the bottom.
The protein and fiber breakdown
One can of black beans provides a meaningful source of both protein and fiber, and pairing it with corn adds even more fiber to the mix. For women we like to see protein intake land around 1.0–1.2g per kg of body weight per day — well above the standard minimum of 71g. A salad like this is a great base, but pairing it with an additional protein source (grilled chicken, shrimp, ground turkey, or a fried egg on top) helps round it out into a more complete meal, especially if you’re eating it as a main rather than a side.
How to serve it
- As a dip with tortilla chips
- Spooned over a bowl of rice or greens
- As a side alongside grilled chicken, fish, or steak
- Wrapped into a tortilla with your favorite protein
- Straight out of the container as a quick, no-fuss lunch
Nutrition benefits
Beyond the protein and fiber, this salad brings a lot to the table nutritionally. The fiber from the beans and corn supports digestion and gut health, which can be especially helpful in the postpartum period. Avocado offers healthy monounsaturated fats that support satiety and hormone production. Cherry tomatoes and lime juice add a boost of vitamin C, and the whole dish is naturally dairy-free, gluten-free, and plant-based.
Variations to try
- Add red onion: ½ cup diced red onion for extra bite (a popular choice, just not our family’s favorite).
- Add heat: a diced jalapeño or a pinch of chili powder.
- Make it a full meal: stir in shredded rotisserie chicken or black bean + rice for a heartier bowl.
- Swap the herb: if cilantro isn’t your thing, fresh parsley or basil works too.
- Grilled corn upgrade: if you have grilled corn on hand, it adds a smoky depth that canned corn doesn’t quite match.
